A delightful dish of crispy chicken smothered in a warm, sweet cranberry orange sauce, perfect for busy weeknights.

- 4 boneless, skinless chicken breasts or thighs
- 1 cup fresh cranberries
- 1 large orange (zested and juiced, about 1/2 cup juice)
- 2 tablespoons honey or maple syrup
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 teaspoon fresh thyme or rosemary
- Salt and pepper (to taste)
- 1/2 cup chicken broth or water
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
Instructions
- Pat chicken dry with paper towels and season with salt, pepper, and thyme or rosemary. Marinate for 30 minutes if desired.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken and cook for 4โ6 minutes per side until golden brown. Transfer to a plate.
- In the same skillet, add garlic and sautรฉ for 30 seconds.
- Add cranberries, orange juice, zest, and honey. Stir to combine.
- Bring the sauce to a simmer and cook for 5โ7 minutes until cranberries burst.
- Return the chicken to the skillet, spoon sauce over it.
- Pour in chicken broth and scrape up browned bits for flavor.
- Cover and reduce heat to low. Simmer for 10โ12 minutes until chicken reaches 165ยฐF.
- Spoon sauce over the chicken and serve immediately.
Notes
Use fresh orange juice for the best taste. If using frozen cranberries, rinse them first. Brown the chicken well for enhanced flavor.
