This Easy Crockpot Chicken Dinner is a healthy, flavorful, and family-friendly recipe that requires minimal prep. With tender chicken, hearty vegetables, and savory seasoning, it’s the perfect slow cooker meal for busy weeknights, meal prep, or all-day cooking.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion, sliced
  • 3 carrots, chopped
  • 2 potatoes, cubed
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Optional: 1/2 cup frozen peas or corn (added during last 30 minutes)

Instructions

  1. Place vegetables at the bottom of the crockpot.
  2. Season chicken with salt, pepper, paprika, and thyme, then place on top of vegetables.
  3. Pour chicken broth evenly over the mixture.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  5. Optional: Add peas or corn during the last 30 minutes.
  6. Serve warm with rice, bread, or salad.

  • For extra flavor, sear the chicken before adding it to the crockpot.
  • Substitute sweet potatoes for white potatoes for a lighter twist.
