Description

A small, bright cookie blending fresh lemon and oats for a light, no-bake treat.


Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Mix together the rolled oats, peanut butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt until well combined.
  2. Refrigerate the mixture for about 30 minutes to help it firm up.
  3. Once set, scoop tablespoon-sized portions and shape them into cookies.
  4. Place the cookies on a parchment-lined tray and refrigerate until firm, about 1 hour.
  5. Store in an airtight container in the refrigerator.

Notes

Serve them cold or slightly chilled. Use smooth peanut butter for a soft mix and keep in the fridge.
