Instructions
- Mix together the rolled oats, peanut butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt until well combined.
- Refrigerate the mixture for about 30 minutes to help it firm up.
- Once set, scoop tablespoon-sized portions and shape them into cookies.
- Place the cookies on a parchment-lined tray and refrigerate until firm, about 1 hour.
- Store in an airtight container in the refrigerator.
Notes
Serve them cold or slightly chilled. Use smooth peanut butter for a soft mix and keep in the fridge.
