- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup fresh strawberries, pureed
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 325ยฐF (163ยฐC).
- In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in sour cream and strawberry puree.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set and the edges are lightly golden.
- Let cool, then refrigerate for at least 4 hours.
- Garnish with fresh strawberries before serving.
Notes
Use room temperature cream cheese to avoid lumps and mix gently after adding eggs to keep the cake smooth.
