Description

A sweet, soft strawberry cheesecake that’s easy to make and perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh strawberries, pureed
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 325ยฐF (163ยฐC).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in sour cream and strawberry puree.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes, or until the center is set and the edges are lightly golden.
  8. Let cool, then refrigerate for at least 4 hours.
  9. Garnish with fresh strawberries before serving.

Notes

Use room temperature cream cheese to avoid lumps and mix gently after adding eggs to keep the cake smooth.
