Ingredients

- 1 can white beans (cannellini or great northern)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 carrot, diced
- 2 stalks celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups spinach or kale
- Olive oil
Instructions
- In a large pot, heat a splash of olive oil over medium heat.
- Add the chopped onion, carrot, and celery. Sautรฉ until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and sautรฉ for another minute.
- Pour in the vegetable broth and bring to a boil.
- Stir in the white beans, thyme, rosemary, salt, and pepper.
- Reduce heat and let simmer for 15-20 minutes.
- Add spinach or kale and cook until wilted.
- Adjust seasoning if necessary and serve hot.
Notes
Serve hot, garnished with fresh herbs or lemon. Pairs well with crusty bread or a light salad.
