Description

A comforting and nutritious white bean soup filled with flavor, easy to make, and perfect for chilly days.


Ingredients

  • 1 can white beans (cannellini or great northern)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups spinach or kale
  • Olive oil

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion, carrot, and celery. Sautรฉ until the vegetables are softened, about 5-7 minutes.
  3. Add the minced garlic and sautรฉ for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Stir in the white beans, thyme, rosemary, salt, and pepper.
  6. Reduce heat and let simmer for 15-20 minutes.
  7. Add spinach or kale and cook until wilted.
  8. Adjust seasoning if necessary and serve hot.

Notes

Serve hot, garnished with fresh herbs or lemon. Pairs well with crusty bread or a light salad.
