Description

Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, combine vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fill each cupcake liner two-thirds full with batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let the cupcakes cool completely.
  8. For the frosting, beat the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla, beating until fluffy.
  9. Frost the cooled cupcakes and decorate as desired.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. Cool cupcakes fully before frosting.
