- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions
- In a large skillet, heat olive oil over medium heat. Add the sliced beef and cook until browned. Remove and set aside.
- In the same skillet, add onion and garlic; sauté until softened.
- Add mushrooms and cook until browned.
- Stir in beef broth and Dijon mustard; bring to a simmer.
- Return the beef to the skillet, reduce heat, and stir in sour cream until heated through.
- Season with salt and pepper.
- Serve over egg noodles or rice, garnished with fresh parsley.
