Ingredients

  • 2 cups (240g) all-purpose flour, spooned & leveled
  • 3 large eggs
  • ½ tsp sea salt
  • ½ Tbsp extra-virgin olive oil

Instructions

  1. Make the Dough Base: On a clean surface, pile the flour and form a well in the center. Add the eggs, olive oil, and salt into the well.
  2. Mix and Form Dough: Use a fork to slowly incorporate the flour into the eggs. Then mix with your hands until a shaggy dough forms.
  3. Knead the Dough: Knead the dough for 8-10 minutes until it feels smooth. If it’s too dry, add a few drops of water; if it’s too sticky, dust it with a little flour.
  4. Rest the Dough: Shape the dough into a ball, wrap it in plastic wrap, and let it rest for 30 minutes at room temperature.
  5. Divide and Flatten: Cut the dough into 4 equal pieces. Flatten one piece into a small oval shape.
  6. Roll the Dough: Pass the flattened dough through a pasta machine on setting 1 three times. Fold it into thirds and roll it again through settings 2 and 3 three times each. Finally, run it once through settings 4, 5, and 6.
  7. Flour and Store Sheets: Lay the rolled sheets on a floured baking sheet. Dust them with flour and fold them lightly. Repeat with the remaining pieces of dough.
  8. Cut the Pasta: Use a cutter to shape the pasta as you like (e.g., fettuccine).
  9. Cook the Pasta: Boil the pasta in salted water for 1-2 minutes until it reaches al dente. Drain and serve immediately.

Notes

Serve with your favorite sauce, such as marinara, alfredo, or pesto. Store leftover pasta in an airtight container in the refrigerator for up to 2 days or freeze for longer storage.
