Description

A warm and comforting Greek soup made with chicken, orzo, and a zesty lemon flavor.


Ingredients

  • 1 lb chicken breasts
  • 8 cups chicken broth
  • 1 cup orzo or rice
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sautรฉ onion, garlic, carrots, and celery until softened.
  2. Add chicken and broth to the pot; bring to a boil.
  3. Stir in orzo or rice and let it simmer until cooked through.
  4. In a bowl, whisk the eggs and lemon juice until smooth.
  5. Gradually add some hot broth to the egg mixture to temper it, then slowly stir it back into the pot.
  6. Adjust seasoning with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

Use homemade chicken broth for a richer flavor. Temper the eggs properly to prevent curdling.
