Description
A delicious and healthy twist on classic banana bread, made moist with Greek yogurt and sweetened naturally with ripe bananas.
Ingredients

- 3 ripe bananas
- 1 cup Greek yogurt
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup mix-ins (nuts, chocolate chips, etc.)
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and grease a loaf pan.
- In a large bowl, mash the ripe bananas.
- Add the Greek yogurt, sugar, eggs, and vanilla extract; mix well.
- Sprinkle the baking soda and salt over the mixture and stir to combine.
- Gradually add the flour and gently fold until just combined.
- If using, fold in your chosen mix-ins.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Use very ripe bananas for the best sweetness and flavor. Don’t overmix the batter for a tender loaf.
