Description

A delicious and healthy twist on classic banana bread, made moist with Greek yogurt and sweetened naturally with ripe bananas.


Ingredients

Scale
  • 3 ripe bananas
  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup mix-ins (nuts, chocolate chips, etc.)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add the Greek yogurt, sugar, eggs, and vanilla extract; mix well.
  4. Sprinkle the baking soda and salt over the mixture and stir to combine.
  5. Gradually add the flour and gently fold until just combined.
  6. If using, fold in your chosen mix-ins.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for the best sweetness and flavor. Don’t overmix the batter for a tender loaf.
