Ingredients

Instructions
- In a pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sautรฉ until softened.
- Stir in the green olives and cook for a few minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the cream or coconut milk, season with salt and pepper.
- Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat on the stove, adding broth or water if it thickens.
