- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn (frozen or canned)
- 1/2 cup cream cheese, softened
- Juice of 1 lime
- Chopped cilantro for garnish
Instructions
- In a large pot, sautรฉ the onions and garlic until translucent.
- Add shredded chicken, white beans, green chilies, chicken broth, corn, cumin, chili powder, salt, and pepper.
- Bring to a simmer and let it cook for 20 minutes.
- Add cream cheese and lime juice, stirring until well blended and creamy.
- Garnish with chopped cilantro before serving.
Notes
For a quicker option, use rotisserie chicken. Adjust the spices for more heat if desired.
