- 1 cup Unsalted Butter (Swap for margarine for dairy-free)
- 1 cup Granulated Sugar (Reduce for a less sweet version)
- 4 large Eggs (Replace with flax eggs for vegan)
- 2 teaspoons Vanilla Extract
- 1 cup Buttermilk (Yogurt can be used as a substitute)
- 3 cups Powdered Sugar (Look for corn-free options if needed)
- 1 cup Heavy Cream (Coconut cream can be used for dairy-free)
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease two 8-inch round pans and line the bottom with paper.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a large bowl, beat butter and sugar until light.
- Add eggs one at a time, then stir in vanilla.
- Add dry mix in three parts and buttermilk in two parts. Mix until smooth.
- Divide batter into the prepared pans and tap pans on the counter to release large bubbles.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool pans for 10 minutes on a rack, then remove cakes and let cool completely.
- For the cream, whip heavy cream with powdered sugar until firm peaks form.
- Level the cakes if needed. Place one cake on a plate, spread a layer of cream, then add the second cake. Cover the top and sides with more cream.
- Chill the cake for one hour before serving to set the cream.
Notes
Use room temperature eggs and butter for an even mix. Chill bowl and beaters for whipped cream.
