Description

A warm and homey cake filled with spices and topped with sweet cream, perfect for holiday gatherings.


Ingredients

  • 2 cups All-Purpose Flour (Substitute with a gluten-free flour blend for gluten-free)
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Cinnamon (Adjust to taste)
  • 1 teaspoon Nutmeg
  • 1 teaspoon Ginger
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter (Swap for margarine for dairy-free)
  • 1 cup Granulated Sugar (Reduce for a less sweet version)
  • 4 large Eggs (Replace with flax eggs for vegan)
  • 2 teaspoons Vanilla Extract
  • 1 cup Buttermilk (Yogurt can be used as a substitute)
  • 3 cups Powdered Sugar (Look for corn-free options if needed)
  • 1 cup Heavy Cream (Coconut cream can be used for dairy-free)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease two 8-inch round pans and line the bottom with paper.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, beat butter and sugar until light.
  4. Add eggs one at a time, then stir in vanilla.
  5. Add dry mix in three parts and buttermilk in two parts. Mix until smooth.
  6. Divide batter into the prepared pans and tap pans on the counter to release large bubbles.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool pans for 10 minutes on a rack, then remove cakes and let cool completely.
  9. For the cream, whip heavy cream with powdered sugar until firm peaks form.
  10. Level the cakes if needed. Place one cake on a plate, spread a layer of cream, then add the second cake. Cover the top and sides with more cream.
  11. Chill the cake for one hour before serving to set the cream.

Notes

Use room temperature eggs and butter for an even mix. Chill bowl and beaters for whipped cream.
