Description

A comforting and hearty soup made with chicken, wild rice, and vegetables, perfect for a weeknight dinner or a small gathering.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup wild rice, uncooked
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; cook until softened.
  2. Stir in garlic and thyme; cook for another minute.
  3. Add chicken broth and wild rice. Bring to a boil, then reduce heat and let simmer for about 45 minutes, or until rice is tender.
  4. Add shredded chicken and heavy cream to the pot. Stir and season with salt and pepper.
  5. Let it simmer for an additional 5-10 minutes before serving.

Notes

For a creamier texture, stir while adding cream. Use rotisserie chicken to save time. Adjust thickness with broth or water as needed.
