Light and crisp star-shaped cookies made with five simple ingredients, perfect for parties and lunch boxes.

- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 cup cold unsalted butter, cut into small pieces
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Put flour and sugar in a big bowl. Mix them with a fork.
- Add cold butter. Use a pastry cutter or two knives to cut butter into crumbs. Mix until small crumbs form.
- Add egg and vanilla. Stir with a spoon until the dough comes together. Do not overmix.
- Shape dough into a flat disk. Wrap in plastic. Chill for 30 minutes.
- Heat oven to 350°F (175°C). Line a baking sheet with paper.
- Roll dough on a floured board to 1/4 inch thick. Use a small star cutter to press out stars. Place stars on the sheet, one inch apart.
- Sprinkle a little extra sugar on top for a light crunch. Bake for 10 to 12 minutes or until the edges turn light gold.
- Cool on the sheet for 5 minutes. Move cookies to a rack to cool all the way.
Notes
Keep the butter cold for a crisp bite. Do not roll too thin or the cookie will burn fast.
