- 2 cups egg noodles

- 2 cups beef broth

Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until translucent.
- Add the stew meat, cooking until browned on all sides.
- Pour in the beef broth, and bring to a simmer.
- Cover and cook for about 30 minutes, or until the meat is tender.
- Stir in the egg noodles, cover, and cook for an additional 10-15 minutes, until the noodles are cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with parsley if desired.
