Deliciously soft banana brownies with a rich chocolate note, perfect for using ripe bananas.

- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, mix the mashed bananas with the melted butter.
- Stir in the sugar, egg, and vanilla extract until combined.
- Add the cocoa powder, baking soda, and salt, mixing well.
- Gradually add in the flour until just combined, then fold in the chocolate chips if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow to cool before cutting into squares. Enjoy!
Notes
For a richer flavor, use very ripe bananas. Check after 18 minutes to avoid overbaking.
