Description
A rich and flavorful one-pot French onion pot roast that’s slow-cooked to perfection with sweet caramelized onions.

- 3–4 lbs chuck roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 can (10.5 oz) French onion soup
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh thyme, for garnish
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat a bit of oil over medium-high heat. Sear the chuck roast on all sides until browned. Remove and set aside.
- In the same pot, add sliced onions and sauté until they are soft and caramelized, about 10-15 minutes.
- Stir in minced garlic and cook for an additional minute.
- Return the pot roast to the pot. Add the French onion soup, beef broth, Worcestershire sauce, salt, and pepper.
- Cover the pot and place it in the oven. Cook for 3-4 hours, or until the meat is fork-tender.
- Remove from the oven and let it rest for a few minutes. Slice and serve garnished with fresh thyme.
Notes
Brown the meat well for more flavor. Let the roast rest before slicing to keep the juices.
