Description

A rich and flavorful one-pot French onion pot roast that’s slow-cooked to perfection with sweet caramelized onions.


Ingredients

Scale
  • 34 lbs chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 can (10.5 oz) French onion soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme, for garnish

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat a bit of oil over medium-high heat. Sear the chuck roast on all sides until browned. Remove and set aside.
  3. In the same pot, add sliced onions and sauté until they are soft and caramelized, about 10-15 minutes.
  4. Stir in minced garlic and cook for an additional minute.
  5. Return the pot roast to the pot. Add the French onion soup, beef broth, Worcestershire sauce, salt, and pepper.
  6. Cover the pot and place it in the oven. Cook for 3-4 hours, or until the meat is fork-tender.
  7. Remove from the oven and let it rest for a few minutes. Slice and serve garnished with fresh thyme.

Notes

Brown the meat well for more flavor. Let the roast rest before slicing to keep the juices.
