A rich and gooey chocolate lava cake that’s low in carbs and perfect for a quick treat or a special occasion.
Ingredients

- 1/2 cup almond flour
- 2 tablespoons cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened chocolate, melted
- 2 tablespoons butter, melted
- 2 large eggs
- 1/2 teaspoon vanilla extract
- Sweetener to taste (erythritol or stevia)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease two ramekins with butter.
- In a bowl, mix the almond flour, cocoa powder, baking powder, and salt.
- In another bowl, combine melted chocolate, melted butter, eggs, vanilla, and sweetener.
- Whisk the dry ingredients into the wet mixture until smooth.
- Divide the batter between the two ramekins.
- Bake for 10-12 minutes until the edges are set but the center is still soft.
- Let cool for a minute, then invert onto a plate.
- Enjoy while warm for a gooey lava effect.
Notes
Serve warm with a dollop of cream or keto ice cream and fresh berries for an extra treat. Best enjoyed immediately after baking.
