Description

A comforting soup that combines the hearty flavors of traditional lasagna, perfect for chilly nights and serving a crowd.


Ingredients

  • 1 pound ground beef or sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 3 cups chicken or beef broth
  • 8 ounces lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef or sausage with the chopped onion and minced garlic over medium heat. Drain excess fat.
  2. Add the crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
  3. Stir in the broken lasagna noodles and simmer until the noodles are cooked, about 10 minutes.
  4. Before serving, stir in the ricotta cheese and half of the mozzarella cheese.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with remaining mozzarella cheese, Parmesan cheese, and fresh basil.

Notes

You can add red pepper flakes for extra heat or substitute the ground beef with turkey for a lighter version.
