Description

A delightful side dish featuring roasted beets and carrots enhanced with maple syrup for a sweet and caramelized flavor.


Ingredients

  • 4 medium-sized beets, peeled and cut into wedges
  • 4 large carrots, peeled and sliced into thick rounds
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 teaspoon sea salt
  • ยฝ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves or ยฝ teaspoon dried thyme
  • Optional: Crumbled goat cheese for serving

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Peel and cut the beets into wedges and slice the carrots into thick rounds, ensuring uniformity.
  3. In a large mixing bowl, combine olive oil, maple syrup, sea salt, black pepper, and thyme, whisking until well blended.
  4. Add the beets and carrots to the bowl and toss until coated.
  5. Spread the coated vegetables on a large baking sheet in a single layer.
  6. Place the baking sheet in the preheated oven and roast for 30-35 minutes, stirring halfway through, until tender and caramelized.
  7. Remove from oven and let sit for a few minutes before serving, optionally topped with crumbled goat cheese.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the oven or microwave.
