- 4 large carrots, peeled and sliced into thick rounds

- 3 tablespoons maple syrup

- 1 teaspoon fresh thyme leaves or ยฝ teaspoon dried thyme

Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Peel and cut the beets into wedges and slice the carrots into thick rounds, ensuring uniformity.
- In a large mixing bowl, combine olive oil, maple syrup, sea salt, black pepper, and thyme, whisking until well blended.
- Add the beets and carrots to the bowl and toss until coated.
- Spread the coated vegetables on a large baking sheet in a single layer.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes, stirring halfway through, until tender and caramelized.
- Remove from oven and let sit for a few minutes before serving, optionally topped with crumbled goat cheese.
Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the oven or microwave.
