Ingredients

- 2 large chicken breasts, boneless, skinless, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil, for searing
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 8 oz pasta (such as penne, rigatoni, or fettuccine)
- Fresh basil, for garnish
Instructions
- Boil water in a large pot, add salt and pasta, and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Sear chicken until golden brown and fully cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, sautรฉ garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
- Pour in chicken broth and bring to a gentle simmer. Add heavy cream, parmesan cheese, Italian seasoning, and crushed red pepper flakes. Stir until cheese melts and sauce thickens slightly.
- Return chicken to the skillet, mix with sauce, and toss in the cooked pasta until well coated.
- Garnish with fresh basil and additional parmesan cheese if desired. Serve warm.
Notes
For a vegetarian version, substitute chicken with mushrooms and add spinach or kale for extra nutrition.
