Description

A delightful dish with creamy sauce, tender chicken, and sun-dried tomatoes that’s perfect for impressing family and friends.


Ingredients

  • 2 large chicken breasts, boneless, skinless, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil, for garnish

Instructions

  1. Boil water in a large pot, add salt and pasta, and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper. Sear chicken until golden brown and fully cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sautรฉ garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer. Add heavy cream, parmesan cheese, Italian seasoning, and crushed red pepper flakes. Stir until cheese melts and sauce thickens slightly.
  5. Return chicken to the skillet, mix with sauce, and toss in the cooked pasta until well coated.
  6. Garnish with fresh basil and additional parmesan cheese if desired. Serve warm.

Notes

For a vegetarian version, substitute chicken with mushrooms and add spinach or kale for extra nutrition.
