Ingredients

  • 2 large chicken breasts, boneless and skinless, sliced thinly
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, add to skillet, and cook until golden brown and fully cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant. Then add sun-dried tomatoes. Pour in chicken broth, bring to a simmer, and stir in heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes. Cook to thicken.
  4. Add cooked chicken back to the skillet and toss in the drained pasta, mixing until well combined.
  5. Serve warm, garnished with fresh basil.
