Description
A bright and sweet mixed berry trifle made with layers of cake, fresh berries, custard, and whipped cream, perfect for parties or gatherings.

- 2 cups mixed fresh berries (strawberries, raspberries, blueberries)
- 1 cup whipped cream (store-bought or homemade)
- 2 cups vanilla custard
- 1 pound sponge cake or ladyfingers, cut into pieces
- 1/4 cup granulated sugar (for sweetening the berries)
- 1 teaspoon vanilla extract (for the cream)
- Fresh mint leaves (for garnish)
Instructions
- Put the mixed berries in a bowl. Add the granulated sugar. Stir and let sit for 15 minutes to make a light syrup.
- If using store-bought custard, skip homemade steps. If making homemade, follow the package instructions and add vanilla when cool.
- To make whipped cream, beat the cream in a cold bowl until soft peaks form. Add sugar and vanilla extract to taste.
- Cut the sponge cake or ladyfingers into even pieces.
- In a large clear bowl or small cups, layer cake pieces, custard, sugared berries, and whipped cream. Aim for at least three layers.
- End with a thick layer of whipped cream on top.
- Chill the trifle in the fridge for 30 minutes to 1 hour before serving.
- Garnish with fresh mint leaves and a few whole berries just before serving.
Notes
Use very fresh berries for best taste. You can make the trifle the night before and store it in the fridge. Serve cold for best flavor.
