- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups quick oats
Instructions
- In a saucepan, combine brown sugar, butter, and milk. Bring to a boil over medium heat.
- Once boiling, let it cook for 1 minute, then remove from heat.
- Add vanilla extract, shredded coconut, chopped pecans, and quick oats to the mixture.
- Stir until well combined.
- Drop spoonfuls of the mixture onto wax paper and let them cool until set.
Notes
For softer cookies, use quick oats and chop the pecans finely. Work quickly as the mixture sets as it cools.
