Description

Rich and soft chocolate truffles made with dark chocolate, heavy cream, and freeze-dried raspberries, without the need for baking.

Ingredients

Scale
  • 8 oz (225 g) dark chocolate, chopped
  • 1/2 cup (120 ml) heavy cream
  • 2 tbsp butter
  • 1/2 cup freeze-dried raspberries, crushed (or raspberry jam)

Instructions

  1. Put chocolate in a heat-safe bowl.
  2. Heat cream until it just starts to steam. Do not boil.
  3. Pour hot cream over chocolate. Let sit for 1 minute.
  4. Stir until smooth. Add butter and mix.
  5. Stir in crushed freeze-dried raspberries or a spoon of jam. Mix well.
  6. Cover and chill for 1 to 2 hours until firm.
  7. Use a spoon to scoop small balls. Roll them with your hands.
  8. Lightly roll truffles in extra crushed raspberries or cocoa.
  9. Place on a tray and chill for 20 minutes to set.

Notes

For best results, chop chocolate small for quicker melting. Store in the fridge for up to 7 days or freeze for up to 1 month.
