Description
Rich and soft chocolate truffles made with dark chocolate, heavy cream, and freeze-dried raspberries, without the need for baking.
Ingredients

- 8 oz (225 g) dark chocolate, chopped
- 1/2 cup (120 ml) heavy cream
- 2 tbsp butter
- 1/2 cup freeze-dried raspberries, crushed (or raspberry jam)
Instructions
- Put chocolate in a heat-safe bowl.
- Heat cream until it just starts to steam. Do not boil.
- Pour hot cream over chocolate. Let sit for 1 minute.
- Stir until smooth. Add butter and mix.
- Stir in crushed freeze-dried raspberries or a spoon of jam. Mix well.
- Cover and chill for 1 to 2 hours until firm.
- Use a spoon to scoop small balls. Roll them with your hands.
- Lightly roll truffles in extra crushed raspberries or cocoa.
- Place on a tray and chill for 20 minutes to set.
Notes
For best results, chop chocolate small for quicker melting. Store in the fridge for up to 7 days or freeze for up to 1 month.
