Description
Sweet and chewy no bake cookies made with toasted coconut, caramel, and chocolate.
Ingredients

- 1 cup shredded coconut
- 1 cup crushed graham crackers
- 1/2 cup sweetened condensed milk
- 1/2 cup caramel sauce
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Toast the shredded coconut in a skillet over medium heat until golden brown. Set aside.
- In a mixing bowl, combine crushed graham crackers and sweetened condensed milk until well mixed.
- Fold in the toasted coconut and caramel sauce.
- Scoop the mixture onto a baking sheet lined with parchment paper and flatten into cookie shapes. Chill in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in 30-second intervals until smooth.
- Dip each cookie halfway into the melted chocolate and place back on the parchment paper.
- Chill again until the chocolate is set.
Notes
Toast the coconut slowly to avoid burning. Press the mix well so the cookies hold shape.
