Description

Sweet and chewy no bake cookies made with toasted coconut, caramel, and chocolate.


Ingredients

Scale
  • 1 cup shredded coconut
  • 1 cup crushed graham crackers
  • 1/2 cup sweetened condensed milk
  • 1/2 cup caramel sauce
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Toast the shredded coconut in a skillet over medium heat until golden brown. Set aside.
  2. In a mixing bowl, combine crushed graham crackers and sweetened condensed milk until well mixed.
  3. Fold in the toasted coconut and caramel sauce.
  4. Scoop the mixture onto a baking sheet lined with parchment paper and flatten into cookie shapes. Chill in the refrigerator for about 30 minutes.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in 30-second intervals until smooth.
  6. Dip each cookie halfway into the melted chocolate and place back on the parchment paper.
  7. Chill again until the chocolate is set.

Notes

Toast the coconut slowly to avoid burning. Press the mix well so the cookies hold shape.
