Description
A sweet and light dessert that combines a creamy cheesecake filling with a fresh strawberry topping, all without the need for baking.

- 2 cups graham cracker crumbs (about 16 full cracker sheets)
- Pinch of salt
- ยผ cup packed light or dark brown sugar
- ยฝ cup butter, melted
- 16 ounces full-fat cream cheese
- ยฝ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ยฝ cups heavy whipping cream
- 2 tablespoons water
- 2 tablespoons cornstarch
- 1 ยฝ pounds strawberries, hulled and chopped small
- 1 cup granulated sugar
- 1 tablespoon lemon juice
Instructions
- Mix graham crumbs, salt, brown sugar, and melted butter in a bowl. Press the mix into a 9ร9 inch pan. Chill the crust in the fridge while you make the filling.
- Beat the cream cheese until smooth. Add ยฝ cup sugar and vanilla, and beat again.
- Whip the heavy cream until it makes soft peaks. Fold the whipped cream into the cream cheese mix. Spread the filling over the chilled crust and smooth the top. Chill for at least 2 hours.
- In a small pot, put chopped strawberries, 1 cup sugar, lemon juice, and water. Stir cornstarch into a few tablespoons of cold water to make a slurry.
- Heat the strawberry mix on low, stirring until the fruit releases juice. Add the cornstarch slurry and stir until the mix thickens. Let it cool.
- Spoon the cooled strawberry topping over the chilled filling and chill again until set, about 1โ2 hours.
Notes
For best results, use full-fat cream cheese and chill well after each step to maintain the shape of the bars.
