A warm and comforting beef stew that cooks slowly in a crock pot, using simple ingredients for a rich flavor.

- 2 lbs beef chuck, cubed
- 4 carrots, sliced
- 3 potatoes, cubed
- 3 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 3 tbsp flour
- 2 tsp salt
- 1 tsp pepper
- 1 tsp thyme
- 1 tsp rosemary
- 2 bay leaves
Instructions
- Cut the beef into cubes and dust with flour, salt, and pepper.
- Heat oil in a pan and brown the meat (optional).
- Put the beef in the crock pot.
- Add the carrots, potatoes, celery, onion, garlic, thyme, rosemary, and bay leaves.
- Stir in the tomato paste and pour in the beef broth.
- Cover the pot and cook on Low for 480–540 minutes or on High for 240–300 minutes until the beef is soft.
- Remove the bay leaves and serve hot.
Notes
For added flavor, brown the beef first. You can also add mushrooms or red wine for variations.
