Description

A warm and comforting beef stew that cooks slowly in a crock pot, using simple ingredients for a rich flavor.


Ingredients

  • 2 lbs beef chuck, cubed
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 3 tbsp flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves

Instructions

  1. Cut the beef into cubes and dust with flour, salt, and pepper.
  2. Heat oil in a pan and brown the meat (optional).
  3. Put the beef in the crock pot.
  4. Add the carrots, potatoes, celery, onion, garlic, thyme, rosemary, and bay leaves.
  5. Stir in the tomato paste and pour in the beef broth.
  6. Cover the pot and cook on Low for 480–540 minutes or on High for 240–300 minutes until the beef is soft.
  7. Remove the bay leaves and serve hot.

Notes

For added flavor, brown the beef first. You can also add mushrooms or red wine for variations.
