Description

A bright, moist cake made with olive oil and fresh orange juice, resulting in a soft crumb and delightful aroma.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup olive oil
  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the eggs and sugar until light and fluffy.
  3. Stir in the olive oil, orange juice, and orange zest.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Optionally dust with sugar or serve with jam. Store wrapped at room temperature for 2 days or in the fridge for up to one week.
