Description

A light and moist cake made with fresh orange juice and olive oil, perfect for parties or tea time.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup olive oil
  • 3/4 cup fresh orange juice
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 orange
  • 1 cup mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, mix the sugar and olive oil until well combined. Add the eggs, orange juice, and orange zest, and mix until smooth.
  4. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool completely in the pan before transferring to a wire rack.
  7. For the frosting, whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  8. Spread the mascarpone frosting over the cooled cake and serve.

Notes

For better flavor, use fresh orange juice and zest. Allow the cake to cool fully before frosting with mascarpone.
