Description

A bright and warm meal featuring juicy chicken thighs glazed with a sweet and tangy orange and cranberry sauce.


Ingredients

  • 4โ€“6 chicken thighs (bone-in, skin-on)
  • 1 cup fresh orange juice
  • 1/2 cup cranberry sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh cranberries and orange slices, for garnish (optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Pat the chicken dry with paper towels and season skin with salt and pepper.
  3. In a bowl, mix orange juice, cranberry sauce, honey, soy sauce, minced garlic, ground ginger, and olive oil. Stir until smooth.
  4. Place chicken in a baking dish skin-side up. Pour half the sauce over the chicken.
  5. Bake for 35โ€“45 minutes, until the skin is brown and the center reads 165ยฐF (74ยฐC).
  6. In the last 5 minutes, spoon the rest of the sauce over the meat to make a glaze.
  7. Remove from oven and let rest for 5 minutes. Garnish with fresh cranberries and orange slices if desired.

Notes

For best results, use bone-in, skin-on thighs. Adjust salt and honey in the sauce to taste. You can freeze cooked chicken for up to 2 months.
