A bright and warm meal featuring juicy chicken thighs glazed with a sweet and tangy orange and cranberry sauce.

- 4โ6 chicken thighs (bone-in, skin-on)
- 1 cup fresh orange juice
- 1/2 cup cranberry sauce
- 1/4 cup honey
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Fresh cranberries and orange slices, for garnish (optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Pat the chicken dry with paper towels and season skin with salt and pepper.
- In a bowl, mix orange juice, cranberry sauce, honey, soy sauce, minced garlic, ground ginger, and olive oil. Stir until smooth.
- Place chicken in a baking dish skin-side up. Pour half the sauce over the chicken.
- Bake for 35โ45 minutes, until the skin is brown and the center reads 165ยฐF (74ยฐC).
- In the last 5 minutes, spoon the rest of the sauce over the meat to make a glaze.
- Remove from oven and let rest for 5 minutes. Garnish with fresh cranberries and orange slices if desired.
Notes
For best results, use bone-in, skin-on thighs. Adjust salt and honey in the sauce to taste. You can freeze cooked chicken for up to 2 months.
