- 2 cups fresh peaches, sliced (or canned peaches, drained)
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter (room temperature)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp baking powder
- ½ cup milk or yogurt
- 1 tsp vanilla extract
- Optional: ½ tsp ground cinnamon, sliced almonds for garnish
Instructions
- Preheat Oven: 350°F (175°C). Grease and line an 8-inch round pan with parchment paper.
- Prepare Peaches: Wash, peel, and slice peaches. Sprinkle lightly with sugar and set aside.
- Make Batter: Cream butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
- Combine Dry Ingredients: In a separate bowl, mix flour and baking powder.
- Mix Wet & Dry: Add dry ingredients to the butter mixture alternately with milk. Mix until combined.
- Assemble Cake: Pour batter into pan. Arrange peach slices on top in a circular pattern.
- Bake: 40–45 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let cool before slicing. Serve plain or with whipped cream.
Notes
- Use firm, ripe peaches for best results.
- Toss peaches in a little flour before baking to prevent sinking.
- For added flavor, sprinkle cinnamon sugar on top before baking.
