Description

This Peach Puff Pastry Tart is a light summer dessert with golden, flaky layers and caramelized peaches. Perfect for gatherings, brunch, or an easy weeknight treat.


Ingredients

  • 1 sheet puff pastry, thawed
  • 34 ripe peaches, sliced
  • 2 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1 tbsp butter, melted
  • 1 tbsp apricot jam (optional, for glaze)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry slightly and place on prepared sheet. Score a border 1 inch from the edge without cutting through.
  3. Arrange peach slices neatly within the border. Brush with melted butter and sprinkle sugars evenly.
  4. Bake 20–25 minutes, until pastry is golden and peaches caramelized.
  5. If desired, brush with warm apricot jam for a glossy finish.
  6. Cool slightly, slice, and serve warm or at room temperature.

Notes

  • Use ripe but firm peaches for the best caramelization.
  • Substitute peaches with nectarines, plums, or apples as seasonal alternatives.
