Instructions
- Preheat oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
- In a bowl, whisk almond flour, all-purpose flour, baking powder, and salt.
- In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla and almond extract.
- Fold in the dry ingredients until just combined. Gently fold in pear slices.
- Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes until golden and a skewer inserted comes out clean.
- Cool cake completely. Meanwhile, whip heavy cream with powdered sugar until soft peaks form.
- Spread whipped cream evenly on top of the cooled cake. Garnish with toasted almond flakes and extra pear slices if desired.
