  • 2 ripe pears, peeled, cored, and sliced

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
  2. In a bowl, whisk almond flour, all-purpose flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla and almond extract.
  4. Fold in the dry ingredients until just combined. Gently fold in pear slices.
  5. Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes until golden and a skewer inserted comes out clean.
  6. Cool cake completely. Meanwhile, whip heavy cream with powdered sugar until soft peaks form.
  7. Spread whipped cream evenly on top of the cooled cake. Garnish with toasted almond flakes and extra pear slices if desired.
