Ingredients

  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup finely ground pistachios

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  6. Fold in the ground pistachios.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  10. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and mix until well combined.
  11. Add the heavy cream, vanilla extract, and ground pistachios. Beat until light and fluffy.
  12. Once the cakes are cooled, spread frosting between the layers and over the top and sides of the cake.
  13. Decorate with additional ground pistachios if desired.
