Description

Delicious soft red cupcakes topped with smooth and tangy cream cheese frosting, perfect for parties or as a sweet treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with paper liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  7. For the cream cheese frosting, beat together cream cheese and butter until smooth, then gradually add powdered sugar and vanilla until well combined.
  8. Frost the cooled cupcakes generously with the cream cheese frosting. Enjoy!
