Description

A festive red velvet cake roll filled with creamy whipped cream, perfect for holiday celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for cream)
  • Chocolate shavings (for decoration)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and granulated sugar until light and fluffy. Add eggs, one at a time, along with vanilla extract and red food coloring. Mix until combined.
  4. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  5. Spread the batter evenly into the prepared pan and bake for 12-15 minutes until a toothpick comes out clean.
  6. Once baked, allow to cool slightly, then roll the cake while still warm in the parchment paper to form a log shape. Let it cool completely.
  7. For the filling, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Unroll the cake and spread the whipped cream evenly over the surface, then re-roll the cake.
  8. Frost the outside of the log with additional whipped cream and decorate with chocolate shavings.
  9. Chill before serving and slice to reveal the festive red interior.

Notes

Keep the cake soft to allow for easy rolling. Chill the cream before whipping for best results.
