- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for cream)
- Chocolate shavings (for decoration)
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line a jelly roll pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat butter and granulated sugar until light and fluffy. Add eggs, one at a time, along with vanilla extract and red food coloring. Mix until combined.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Spread the batter evenly into the prepared pan and bake for 12-15 minutes until a toothpick comes out clean.
- Once baked, allow to cool slightly, then roll the cake while still warm in the parchment paper to form a log shape. Let it cool completely.
- For the filling, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Unroll the cake and spread the whipped cream evenly over the surface, then re-roll the cake.
- Frost the outside of the log with additional whipped cream and decorate with chocolate shavings.
- Chill before serving and slice to reveal the festive red interior.
Notes
Keep the cake soft to allow for easy rolling. Chill the cream before whipping for best results.
