Description

Ingredients

  • 3 medium beets
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Wash the beets and sweet potatoes, peel if desired, and cut into cubes.
  3. In a large bowl, combine the cubed beets and sweet potatoes.
  4. Drizzle with olive oil, and sprinkle with salt and pepper.
  5. Toss until everything is well coated.
  6. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  7. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  8. Remove from the oven and garnish with fresh herbs if desired.
  9. Serve warm or at room temperature.

Notes

For even cooking, cut beets and sweet potatoes into similar-sized cubes. Optionally add other vegetables or seasonings for variety.
