- 2 medium sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Wash the beets and sweet potatoes, peel if desired, and cut into cubes.
- In a large bowl, combine the cubed beets and sweet potatoes.
- Drizzle with olive oil, and sprinkle with salt and pepper.
- Toss until everything is well coated.
- Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh herbs if desired.
- Serve warm or at room temperature.
Notes
For even cooking, cut beets and sweet potatoes into similar-sized cubes. Optionally add other vegetables or seasonings for variety.
