Description

Deliciously soft cookies made with honey and crunchy pistachios, balancing sweetness and a hint of salt.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup honey
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and honey until smooth.
  3. Add in the eggs, one at a time, mixing well after each addition.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients until combined.
  5. Fold in the chopped pistachios gently.
  6. Drop tablespoon-sized balls of dough onto a lined baking sheet and sprinkle with sea salt.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Cool slightly before transferring to a wire rack to cool completely.

Notes

Use room temperature butter for smoother creaming. Store in an airtight container with a slice of bread to keep cookies soft.
