- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons, juiced
- 2 tbsp dried oregano
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, chopped
- 1 cup cherry tomatoes
- Feta cheese (optional for topping)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- In a bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper.
- Marinate the chicken in the mixture for at least 30 minutes.
- On a large sheet pan, arrange the marinated chicken and surround it with the chopped vegetables.
- Drizzle any remaining marinade over the vegetables.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- If desired, sprinkle feta cheese on top before serving.

Notes
Cut vegetables into even pieces for uniform cooking. For a crisp top, broil for 2 minutes at the end.
