Description

This delightful cake uses whole oranges, providing a bright and soft texture perfect for any occasion.


Ingredients

  • 2 medium-sized oranges (preferably organic)
  • 3 large eggs
  • 1 ยฝ cups granulated sugar
  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 2 ยฝ teaspoons baking powder
  • ยฝ cup vegetable oil (or olive oil for richer flavor)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Wash the oranges well to remove dirt and wax.
  2. Cut the oranges into quarters and remove any seeds.
  3. Put the orange quarters (peel, pulp, and all) into a blender or food processor and blend until smooth. Set aside.
  4. Heat the oven to 350ยฐF (175ยฐC) and grease and flour a 9-inch round cake pan or line it with parchment paper.
  5. In a large bowl, beat the eggs and sugar until light and a bit fluffy.
  6. Add the orange puree in steps and mix well.
  7. Sift the flour and baking powder. Slowly add to the wet mix, stirring until just combined.
  8. Add the oil and stir until the batter is smooth.
  9. Pour the batter into the pan and smooth the top with a spatula.
  10. Bake for 40โ€“45 minutes or until a toothpick in the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes, then move it to a wire rack to cool completely.
  12. Dust with powdered sugar if desired, slice, and serve with tea or coffee.

Notes

For a richer taste, use olive oil instead of vegetable oil. Store the cake in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
