Description

A comforting and easy beef stew cooked in a slow pot, filled with tender meat and hearty vegetables.


Ingredients

  • 2 pounds beef stew meat
  • 4 carrots, chopped
  • 3 potatoes, cubed
  • 1 onion, diced
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In the Crockpot, add the beef stew meat, carrots, potatoes, and onion.
  2. In a bowl, mix together the beef broth, garlic, thyme, rosemary, salt, and pepper.
  3. Pour the mixture over the meat and vegetables in the Crockpot.
  4. Cover and cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
  5. Serve and enjoy!

Notes

Cut meat into uniform pieces for even cooking. Brown meat first for a richer flavor. Use fresh herbs if available. Adjust seasoning to taste towards the end of cooking.
