Description

A warm, hearty slow cooker beef stew that’s easy to prepare and full of flavor.


Ingredients

  • 2 pounds stew meat
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. In a slow cooker, combine stew meat, carrots, potatoes, onion, and garlic.
  2. In a separate bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  3. Pour the mixture over the meat and vegetables in the slow cooker.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. If you prefer a thicker stew, mix flour with a small amount of water to create a slurry, and stir it into the stew during the last 30 minutes of cooking.
  6. Serve hot.

Notes

For a richer flavor, brown the meat first. Serve with fresh parsley or thyme on top, and warm bread on the side.
