A warm, hearty slow cooker beef stew that’s easy to prepare and full of flavor.
Ingredients

- 2 pounds stew meat
- 4 cups beef broth
- 4 large carrots, sliced
- 4 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons flour (optional, for thickening)
Instructions
- In a slow cooker, combine stew meat, carrots, potatoes, onion, and garlic.
- In a separate bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour the mixture over the meat and vegetables in the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours.
- If you prefer a thicker stew, mix flour with a small amount of water to create a slurry, and stir it into the stew during the last 30 minutes of cooking.
- Serve hot.
Notes
For a richer flavor, brown the meat first. Serve with fresh parsley or thyme on top, and warm bread on the side.
