- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 2 tablespoons fresh thyme
- 2 tablespoons fresh rosemary
- Salt and pepper to taste
- 2 cups cooked fluffy rice
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, salt, and pepper.
- Add chicken breasts to the slow cooker and coat them with the mixture.
- Cover and cook on low for 360 minutes or on high for 240 minutes until the chicken is cooked through.
- Remove the chicken and shred it if desired; then return it to the slow cooker to soak in the juices.
- Serve the chicken over fluffy rice and garnish with fresh parsley.
Notes
Use fresh herbs for the best flavor. For a thicker sauce, reduce some liquid on the stove.
