Description

Visually stunning cookies with colorful, transparent centers made from crushed Jolly Ranchers, perfect for special occasions and fun baking days.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed Jolly Ranchers (variety of colors)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the flour mixture and mix until just combined.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness.
  7. Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  8. Cut out small shapes in the center of each cookie.
  9. Fill the center cut-outs with crushed Jolly Ranchers.
  10. Bake for 8-10 minutes or until the edges are lightly golden.
  11. Let cool on a wire rack before decorating or displaying.

Notes

Store in an airtight container at room temperature for up to a week, or freeze separated with parchment paper for longer storage. Make sure your butter is softened for easier mixing.
