Ingredients

- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup crushed Jolly Ranchers (variety of colors)
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the flour mixture and mix until just combined.
- Roll out the dough on a floured surface to about 1/4 inch thickness.
- Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
- Cut out small shapes in the center of each cookie.
- Fill the center cut-outs with crushed Jolly Ranchers.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Let cool on a wire rack before decorating or displaying.
Notes
Store in an airtight container at room temperature for up to a week, or freeze separated with parchment paper for longer storage. Make sure your butter is softened for easier mixing.
