Delicious and easy-to-make strawberry cheesecake bars that are perfect for parties or a sweet treat any day.

- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tbsp granulated sugar (for crust)
- 16 oz cream cheese, softened
- ¾ cup granulated sugar (for filling)
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 1½ cups fresh strawberries, diced
- ¼ cup granulated sugar (for topping)
- 1 tbsp cornstarch
- 1 tbsp water
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham crumbs, melted butter, and 2 tbsp sugar in a bowl. Press the mix into the bottom of an 8×8 inch pan in an even layer.
- Beat the cream cheese until smooth. Add ¾ cup sugar and beat again. Add eggs one at a time and mix. Stir in vanilla and sour cream. Pour the cream cheese mix over the crust and smooth the top.
- In a small pot, mix diced strawberries, ¼ cup sugar, cornstarch, and water. Cook on low heat and stir until the mix thickens and the fruit softens. Let the jam cool a little.
- Spoon the strawberry topping over the cream layer in small drops. Use a knife to make light swirls on the top. Bake for 30 to 35 minutes, until the center is set and not wobbly.
- Let the bars cool on the counter for 1 hour. Chill in the fridge for at least 2 hours, then cut into squares.
