Description

Delicious and easy-to-make strawberry cheesecake bars that are perfect for parties or a sweet treat any day.


Ingredients

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 1½ cups fresh strawberries, diced
  • ¼ cup granulated sugar (for topping)
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham crumbs, melted butter, and 2 tbsp sugar in a bowl. Press the mix into the bottom of an 8×8 inch pan in an even layer.
  3. Beat the cream cheese until smooth. Add ¾ cup sugar and beat again. Add eggs one at a time and mix. Stir in vanilla and sour cream. Pour the cream cheese mix over the crust and smooth the top.
  4. In a small pot, mix diced strawberries, ¼ cup sugar, cornstarch, and water. Cook on low heat and stir until the mix thickens and the fruit softens. Let the jam cool a little.
  5. Spoon the strawberry topping over the cream layer in small drops. Use a knife to make light swirls on the top. Bake for 30 to 35 minutes, until the center is set and not wobbly.
  6. Let the bars cool on the counter for 1 hour. Chill in the fridge for at least 2 hours, then cut into squares.
