- 1 ยฝ cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, chopped
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a greased 9×9 inch pan.
- In another bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in chopped strawberries.
- Pour the cream cheese mixture over the crust in the pan.
- Bake for 25-30 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
Serve cold or at room temperature. Add a small strawberry or whipped cream on top for added presentation.
