Description

A bright red, sweet poke cake that combines soft vanilla cake with a creamy cheesecake filling and fresh strawberries.


Ingredients

Scale
  • 1 box vanilla cake mix (made according to package directions)
  • 1 (3 oz) package strawberry jello
  • 1 cup water
  • 1 (8 oz) package cream cheese (at room temperature)
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 carton whipped topping
  • 1 quart strawberries

Instructions

  1. Make and bake the cake according to package directions.
  2. While the cake is baking, mix up the jello by adding 1 cup boiling water and set aside to cool.
  3. When the cake comes out of the oven, poke holes in the top with a wooden spoon and pour half of the jello mixture into the holes. Let cool.
  4. In a mixing bowl, add the cream cheese, sugar, and vanilla, and beat until the sugar is dissolved. Add the remaining jello and mix until combined.
  5. Once the cake is cool, spread the cheesecake mixture evenly over the top.
  6. Top with whipped topping.
  7. Wash and clean the strawberries, then cut into halves or quarters and place on top of the cake.
  8. Refrigerate until ready to serve.

Notes

Let the cake cool well before spreading the cream cheese mix. Use cold whipped topping for better texture.
