- 1 cup coconut milk
- 1 cup almond milk
- 1/2 cup chia seeds
- 1/4 cup maple syrup or sweetener of choice
- 1 cup strawberries, chopped
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a bowl, whisk together coconut milk, almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt until there are no clumps.
- Cover and refrigerate for at least 4 hours or overnight to thicken.
- Once thick, stir again and add chopped strawberries on top before serving.
Notes
Use full-fat coconut milk for a creamier texture. If the pudding is too thick, add a little more milk and stir.
