Description

A simple, fresh, and healthy pudding made with coconut milk, almond milk, and chia seeds, perfect for breakfast or dessert.


Ingredients

  • 1 cup coconut milk
  • 1 cup almond milk
  • 1/2 cup chia seeds
  • 1/4 cup maple syrup or sweetener of choice
  • 1 cup strawberries, chopped
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a bowl, whisk together coconut milk, almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt until there are no clumps.
  2. Cover and refrigerate for at least 4 hours or overnight to thicken.
  3. Once thick, stir again and add chopped strawberries on top before serving.

Notes

Use full-fat coconut milk for a creamier texture. If the pudding is too thick, add a little more milk and stir.
